Unfortunately, there are still bland hypotheses regarding the possibility that the Etruscans, thousands of years ago, already consumed the Tuber magnatums. On the other hand, it is certain that in Greece it was used for aristocratic banquets, even giving it medicinal benefits; Plutarch, a famous Greek intellectual, thought that these mushrooms were the union of water, heat and lightning. Juvenal focused mainly on the last "ingredient", and narrating (as a poet what it was) the exploits of Jupiter during the creation of this truffle, he also embroidered in the network of its aphrodisiac properties, precisely in relation to sexual myths about Jupiter. In the Middle Ages there was a growing insecurity about the nature of these mushrooms: they were supposed to be small sorceries, excrements, or even animals! Gastronomy with the Tuber magnatum



The Tuber magnatum has now enriched most of the Piedmontese food baggage, motherland of this prized mushroom. Description of the Tuber magnatum




The Tuber magnatum has a globular and very irregular shape: it is said that two white truffles of similar shape can never be found. Its color is variable, tending to brownish, ocher, and this is partly due to the depth of birth in the ground . These particular mushrooms are part of the hypogean type, that is that it is born and matures always underground, without some flowers or plants coming out of the ground: the truffles anchor themselves to the roots of some trees, including the Tiglio or the Rovere, to feed on. Thanks to the chemical exchange, the fungi are kept alive by yielding mineral elements and gaining carbohydrates, the main source of energy, from the tree. The only way to find them is therefore due to the release of particular molecules with an intense flavor, such as special specimens of dogs or pigs can be trained to recognize.
