The Tuber magnatum, white truffle, enriches the soil of the national territory: Piedmont has the highest impact on the podium, the first supplier of all prized truffles, so as to sell its products to the major world markets (New York, Beijing ...). Other examples are Umbria, Tuscany, the Low Friulian area and the Umbrian-Marche Apennines, where the second most important Truffle market is held, in September, between Gubbio and the city of Castello. Not having yet been found some cultivation techniques for these highly prized and highly requested types of mushroom, this wealth is simply based on the fortune of a particular territory as far as its subsoil is concerned. In addition to our country, the white truffle was found only in restricted areas of Istria , more precisely in what is called Motovun Forest.

Unfortunately, there are still bland hypotheses regarding the possibility that the Etruscans, thousands of years ago, already consumed the Tuber magnatums. On the other hand, it is certain that in Greece it was used for aristocratic banquets, even giving it medicinal benefits; Plutarch, a famous Greek intellectual, thought that these mushrooms were the union of water, heat and lightning. Juvenal focused mainly on the last "ingredient", and narrating (as a poet what it was) the exploits of Jupiter during the creation of this truffle, he also embroidered in the network of its aphrodisiac properties, precisely in relation to sexual myths about Jupiter. In the Middle Ages there was a growing insecurity about the nature of these mushrooms: they were supposed to be small sorceries, excrements, or even animals! In a second moment, when the taste of these precious truffles overcame the tacky beliefs, the belief that the Tuber magnatums constituted the quintessential essence was established in the nobility that benefited from them. besides the rich musical heritage, recipes with the constant presence of truffles.
Gastronomy with the Tuber magnatum
The Tuber magnatum has now enriched most of the Piedmontese food baggage, motherland of this prized mushroom. There is a specific guide on things not to be done in any way with truffles, and where instead a sprinkle is more than necessary. Being a very particular type of mushroom, the general rule on cooking does not apply: in fact the white truffle must never, ever be cooked, on pain of destruction of every taste and taste, in addition to the pecuniary waste. With the aid of a special tool, called truffle cutter, it is necessary to lamellar producing small flakes to be added at the end of the dish. The latter must not have other strong-flavored ingredients, or the conflict between the two will lead to the ruin of taste, or to a partial cancellation, making everything tasteless. The truffle is strongly recommended for the most basic dishes and without strong flavors, of a purely neutral taste: the lightly beaten raw meat, the tajarin or egg recipes are the best dish for the Tuber magnatum.
Description of the Tuber magnatum
The Tuber magnatum has a globular and very irregular shape: it is said that two white truffles of similar shape can never be found. Its color is variable, tending to brownish, ocher, and this is partly due to the depth of birth in the ground . These particular mushrooms are part of the hypogean type, that is that it is born and matures always underground, without some flowers or plants coming out of the ground: the truffles anchor themselves to the roots of some trees, including the Tiglio or the Rovere, to feed on. Thanks to the chemical exchange, the fungi are kept alive by yielding mineral elements and gaining carbohydrates, the main source of energy, from the tree. The only way to find them is therefore due to the release of particular molecules with an intense flavor, such as special specimens of dogs or pigs can be trained to recognize.
